Peter Hansen - Food
I like good food, mostly traditional country style food and BBQ. I like a BBQ cheeseburger with the burger wrapped in bacon and the right taste from the charcoal smoke. Then as dessert I know nothing better than fresh strawberries with cream and sugar or a bowl of Danish cold milk soup with small Danish bisquits. This is the taste of summer! One of my favorite courses to make is lasagna, rich with meat, mozerella cheese, and bechamel sauce. I have developped the recipe for years, and my friends tell me it is delicious! It it best served with garlic bread, a good salad and a glass of red wine.
As you can see I like traditional countrystyle Danish food like pork roast (actually my little brother founded a club named Flæskestegsklubben worshipping this course), fried meat balls, meatloaf, fried chicken etc. But I also like to get acquainted with new tastes when I get a chance. Good places to encounter new tastes are when travelling and dinning out on restaurants. Thus I can say I have tasted pork, cow, chicken, lamb, deer, ostrich, pigeon, horse, reindeer, boar, moose, goose, duck, goat, and whale. Some have just been an experience, some were tasty. Whale is forbidden as food source most places in the world, but is legal in countries like Norway, Iceland, etc. If you happen to be in this part of the world I can definately recommend you to try it out. Whale is excellent meat and very tasty!
To me dinning out can serves more than the purpose of getting something to eat because I’m hungry. I like restaurant experiences that appeals to more than the stomach, and I think good cooking is an art form equally to music, fine arts or theatre. Places like that in Denmark outside Copenhagen could be Mortens Kro, Stygge Krumpen, or Skagen Fiskerestaurant, which all serves excellent food but are in the expensive range. I like seafood like smoked salmon, shrimps, fish soup, lobster, clam chowder, Maryland crab cakes, or the wonderfull bouillabaisse. From a general perspective I prefer fish for the main course on a restaurant, and as a part of my lunch when I am home. A great place I can recommend is Middletown tavern in Annapolis in Maryland. It is located in an old scenic house from the colonial age, and they really has some excellent seafood. Especially I can recommend their creamed spinach which I managed to get the recipe at my latest visit.
When I was young I spent some summers in southern Norway where we caught codfish in the sea. However, non of us really liked fish, so either we gave the catch away or we waited until we had enough for fish soup which was the only seafood course we liked. Later I have expanded my likes for seafood, but I am still hesistant to make it myself.
One of my favorite places is Old Glory in Georgetown, Washington DC. This place has a great atmosphaere and plays usually good rock'n'roll or blues. I am particular happy with their chicken wings, and especially their St. Louis style ribs! Juicy, tender and smooth. No wonder they won an award! I was there with a couple of French engineers once, one living in Paris. During the meal the guy from Paris couldn't help telling how much he liked the food and that it was a pity they didn't had such a great place with food like this in his home town.
